11月啦, 真係好撞鬼, 時間真係過得好快呀, 不知不覺差唔多去到年尾啦
今日哩個餸, 真係好好味, 好多人怕啲急凍蜆肉會好腥,
其實唔需要怕, 解好凍後, 先用啲生粉擦勻, 再放係一碗清水入面洗乾淨就得, 唔好沖水喎, 會沖走晒啲鮮味呀
加薯仔配白汁真係唔錯, 而且會令成個餸飽肚好多, 大家記得要試吓啦

1- 急凍蜆肉300克左右, 解凍 (300g of frozen clam, thawed)

5- 薯仔350克左右, 去皮切粒 (350g of potato, peeled, diced )

6- 牛至香草碎1茶匙 (1 tsp of oregano)

1- 罐頭磨菇忌簾湯2/3湯匙 (2/3 cream of mushroom soup)

2- 奶1/4量杯 (1/4 cup of milk)

3- 牛油1湯匙 (1tbsp of butter)

4- 白酒3湯匙 (3 tbsp of white wine)

1- 先將蜆肉用1茶匙白胡椒粉和鹽醃15分鐘備用, 快火落油(約1湯匙)起鑊, 落蜆肉炒熟(圖1), 盛起備用, 快火落油(約1湯匙)起鑊, 將薯仔炒至四面金黃(圖2), 盛起備用

2- 快火落1湯匙油, 快火起鑊, 先爆香蒜茸, 再加入洋蔥和1/3茶匙鹽炒至軟身, 再加入薯仔和青椒兜勻(圖3), 再加水煮滾, 蓋頂焗20分鐘, 再蜆肉和餘下的汁料兜勻煮滾(圖4), 上碟灑上牛至即成

1- Marinade clam with 1 tsp of white pepper and salt for 15 minutes. Heat the pan with 1 tbsp of oil over high heat. Stir fry clam until done (fig.1). Put it aside. Heat the pan with 1 tbsp of oil, stir fry the potato until brown (fig.2). Put it aside.

2- Heat the pan with 1 tbsp of oil over high heat. Stir fry the garlic until fragrant. Stir-fry the onion with 1/3 tsp of salt until soft (fig.2). Stir in the potato and green pepper (fig.3). Stir in the water and heat through. Cover and simmer for 20 minutes. Stir in the clam with the sauce mix and mix it well (fig.4). Dish it up. Top with oregano and serve it in hot.
貼士 Tips
1- 白汁要香濃一點, 可以加多點牛油, 不喜歡太奶的話, 可以減少奶的份量改用水代替, 而白酒可落或不落都無問題, 但不落的話, 請加1/3茶匙糖

2- 薯仔要先用水炆腍, 其間若水乾了, 則要加啲熱水保充, 薯仔經過炒動, 炆時就不會完全溶掉

1- Add more butter if you want the white sauce more fragrant. If you don't like the taste of the milk, you can replace the milk with water. White wine is just optional. If you don't add it, please add 1/3 tsp of sugar

2- Add hot water if water is all evaporated during simmering the potato. Stir fry the potato so that it won't totally dissolve while simmering.
