.: 材料 Ingredients :. 
1- 無骨豬扒400克 (Boneless pork chop, 400g)
2- 型洋蔥1個, 去皮, 切件 (Onion, peeled, cut into pieces, 1 onion)
3- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)
4- 紅蔥頭1粒, 去皮, 切片 (1 shallot, peeled, sliced)
5- 翠玉瓜(細條)1條, 切件 (Zucchini, cut into pieces, 1 zucchini)
6- 本菇200克, 去蒂, 弄散(shimeji mushroom, stemmed off, 200g)
6- 粟粉水- 2湯匙粟粉+1湯匙凍水 (Corn starch mixture - 2 tbsp of corn starch + 1 tbsp of cold water)


.: 汁料 Sauce Mixture :.
1- 糖1茶匙 (Sugar, 1/2 tsp)
2- 熱水2/3量杯,160毫升 (Hot Water, 2/3 cup)
3- 美極鮮醬油1/2茶匙 (Maggi Seasoning, 1/2 tsp)
4- 老抽1/2茶匙 (Dark soy sauce, 1/2 tsp)

 .: 做法 Directions :.
Step 1:
 
豬扒兩面拍鬆 (按這裡看看豬扒處理方法), 用"通少中式醃肉法" 醃15分鐘備用, 易潔鑊用中快火落1/2湯匙油起鑊, 將豬扒四面煎至金黃及全熟, 盛起隔油備用

Beat both side of the pork chop (
click here for the detail of the steps). Marinade the pork chop with "Tony's Marinade Method" for 15 minutes. Heat the non-sticky pan with 1/2 tbsp of oil over medium-high heat until hot. Pan-fry the pork chop until both sides are brown and full cooked. Put it in a sieve over a bowl and put it aside.
Step 2:
 
鑊洗淨抹乾, 再用快火落1/2湯匙燒熱, 落蒜蓉, 紅蔥頭和洋蔥連1/3茶匙鹽炒至洋蔥軟身 (約2-3分鐘), 加入翠玉瓜兜勻炒2分鐘

Clean and dry the pan well. Heat it again with 1/2 tbsp of oil over high heat until hot. Add in the garlic, shallot, and onion with 1/3 tsp of salt. Stir-fry the ingredients until the onion is soft (about 2-3 minutes). Add in the zucchini and mix it well (stir-fry for 2 minutes). 

Step 3:
 
加入本菇兜勻炒2分鐘, 再加入已攪勻的汁料兜勻煮滾, 加入豬扒兜勻, 蓋頂焗2分鐘, 再逐少加入粟粉水埋獻, 上碟即成

Add in the mushroom and mix it well (stir-fry for 2 minutes).  Add in the sauce mixture and bring it to boil.  Add in the pork chop and mix it well.  Cover and simmer for 2 minutes.  Add some corn starch mixture to thicken the sauce. Dish it up and serve it hot.

2- 豬扒要煎燶一點, 炆時汁料會更香口
3- 加生粉水前要先試味, 隨自己喜好調好味道, 才好加入生粉水
